The Nicalizo variety was determined to be a Heirloom Cocoa by the Heirloom Cacao Preservation (HCP) initiative. Heirloom beans are distinctive in their characteristics and present special/unusual but well-balanced flavours, produced through the beans genetics, terroir, and post-harvest processing. In September 2015, the International Cocoa Organisation recognised Nicaragua as a 100% Fine Cocoa Origin. Only 9 countries in the world are recognised as such.
