The organic barley used for this whisky is grown using centuries-old farming knowledge – an understanding of how to work with nature rather than against it. These practices were once commonplace, but nearly lost following the widespread adoption of synthetic fertilisers and pesticides.
That return to natural balance is clear in the glass. This organic single malt is notably smooth and gently fruity, with soft sweetness and clarity on the palate. There’s no bitterness or burn from the alcohol, just a clean, poised spirit that lets the character of the barley and the care of its making shine through. Un-chill filtered to preserve texture and flavour, Highland Harvest is bottled in small, individually numbered batches, with cask numbers noted on each bottle – a quiet mark of transparency and craft.
