Kalamata olives are naturally sun-ripened on the tree before harvesting which takes places after the fruit has undergone full colour change, between Oct & Jan. Our Kalamata olives come from Laconia and Central Greece. These semi-mountainous areas provide a more firm fruit with exquisite characteristics. Rich and firm with a dark colour.
