These Ortiz bonito tuna fillets in olive oil are from the thunnus alalunga, which is a small tuna that generally weighs less than 20kg. The meat has a lovely pale colour and a delicate flavour – much more sophisticated than the standard tinned tuna you might find on supermarket shelves.
Use it in a Nicoise salad with olives, eggs and tomato. Or simple serve on hot buttered toast for a quick early evening meal.

They also only fish at the point in the season when the tuna weigh 30kg or less, to give the most tender fillets.
