Dukkah (doo-kah) or Dukka contains subtly spiced, roasted flavours. The delicious Egyptian blend contains sesame seeds, roasted hazelnuts, coriander seeds, cumin, sea salt, thyme and black pepper. Dukkah has a warm and aromatic flavour profile, with nuttiness from the toasted nuts, earthiness from the seeds, and hints of spice and herbaceous notes. It adds depth and complexity to a variety of dishes.
The word “dukkah” comes from the Arabic word “to pound” or “to crush,” which refers to the traditional method of preparing the spice blend by grinding the ingredients together. The spice mix appears on the streets of Egypt. It is mixed with a little olive oil and used as a dip with bread – YUM!
